RAINBOW SPINACH - Canary Yellow - Magenta Pink - Rhubarb Red  are the 3 varieties found in this slab but they are all from the same species. Although South Africans call them 'spinach' (Spinacia oleracea) they are actually 'swiss chard' (Beta vulgaris). Swiss Chard originates from a wild version of beetroot that naturally grew in the Mediterranean. The Greek philosopher, Aristotle wrote about chard in the fourth century B.C. The original variety has been traced back to the largest Mediterranean island, Sicily not Switzerland as you might think. The name 'Swiss' comes from the Swiss botanist Koch who determined the scientific name of this plant in the 19th century.   Rainbow Swiss chard is distinguished by its bouquet of wrinkled, slightly savoyed rich green leaves and bright colored stems. The leaves grow upright and tall from a dense rosette of ribbed stems. It has subtle earthy flavors along with slight notes of tang, due to its betalain pigment content.
