CINNAMON basil is believed to have originated in Mexico, having grown there for over 4000 years. It has a spicy, fragrant aroma and flavor and contains methyl cinnamate, giving it a flavor reminiscent of cinnamon. Cinnamon basil has somewhat narrow, slightly serrated, dark green, shiny leaves with reddish-purple veins and produces small, pink flowers in summer. Its grows to 30-80cm tall. It is hardier than many basil varieties and if your climate is mild enough for it to over winter, then in can grow as a perennial herb (for more than one growing season). It's a wonderful botanical aromatic to pop into your gin glass with is bright green & purple leaves adding a fresh visual & flavour element.
TASTING NOTE: Hints of Cinnamon & Basil
SAGE is a herb that is prized for its strong herbal aroma and earthy flavor and can be used fresh of dried. This evergreen shrub is part of the mint family. It has oval, dusty gray-green leaves with woody stems. Because of the fine, velveteen hair-like projections on sage leaves, they have a slightly fuzzy or fluffy appearance. It is a perennial plant that grows about 60 cm tall. The flowers are borne in spikes that will attract bees & butterflies to your garden. It originated in the Mediterranean and has a long history of medicinal and culinary use. Sage is often mentioned as the herb of immortality, domestic virtue, health, and wisdom. Sage was a sacred ceremonial herb of the Romans. It has been cultivated for both culinary and medicinal purposes for many centuries in Europe.
TASTING NOTE: Hints of earthy pine.
STAR-FLOWER Borage (Borago officinalis), an edible and ornamental plant with loose drooping clusters of starlike bright blue flowers is native to the eastern Mediterranean region. The beautiful blue star-like Borage flowers are attractive to bees and are a stunning garnish in your gin glass, giving it a lovely hint of melon & cucumber. Borage is a hairy annual and can grow up to 60 cm tall. It features large rough oblong leaves that have a cool cucumber-like aroma and taste. The flowers are borne on red stalks and have five bright yellow stamens that form a cone.
